Ingredients
  

  • hickpeas, drained and rinsed
  •  fresh parsley, chopped
  •  cloves garlic, minced
  • ground cumin
  • salt
  • black pepper
  • olive oil (divided)
  •  pita breads
  •  tahini sauce

Instructions
 

  • Preheat the oven to 375°F (190°C). In a food processor, combine chickpeas, parsley, garlic, cumin, salt, and pepper; pulse until chunky yet cohesive.
  • Form small balls from the mixture and place them on a lined baking sheet. Drizzle with 1 tbsp of olive oil.
  • Bake for about 25 minutes until golden brown, flipping halfway through for even cooking.
  • Slice open each pita and stuff with baked falafel, shredded lettuce, diced tomatoes, and a generous drizzle of tahini sauce.
  • Serve immediately while warm.
