canned chickpeas
fresh parsley, chopped
garlic cloves, minced
onion, finely chopped
ground cumin
baking powder
tahini paste
fresh lemon juice

Instructions
Drain and rinse the canned chickpeas thoroughly.
In a food processor, blend chickpeas, parsley, garlic, onion, cumin, and baking powder until coarse; avoid over-processing.
Shape the mixture into approximately one-inch balls.
Fry in hot oil for about 3 minutes per side or bake at 400°F (200°C) on a parchment-lined sheet for 20 minutes.
For the tahini sauce, whisk together tahini paste, lemon juice, and enough water to reach the desired consistency; season with salt.
Serve warm falafel drizzled with tahini sauce.
