  • canned chickpeas
  • fresh parsley, chopped
  • garlic cloves, minced
  •  onion, finely chopped
  • ground cumin
  •  baking powder
  • tahini paste
  •  fresh lemon juice
  • Water as needed for sauce

Instructions
 

  • Drain and rinse the canned chickpeas thoroughly.
  • In a food processor, blend chickpeas, parsley, garlic, onion, cumin, and baking powder until coarse; avoid over-processing.
  • Shape the mixture into approximately one-inch balls.
  • Fry in hot oil for about 3 minutes per side or bake at 400°F (200°C) on a parchment-lined sheet for 20 minutes.
  • For the tahini sauce, whisk together tahini paste, lemon juice, and enough water to reach the desired consistency; season with salt.
  • Serve warm falafel drizzled with tahini sauce.
