Ingredients
  

  • bone-in chicken thighs
  • full-fat coconut milk
  • freshly squeezed lime juice
  • minced garlic
  • honey
  •  salt
  •  black pepper
  •  chopped fresh cilantro

Instructions
 

  • In a large bowl, combine coconut milk, lime juice, garlic, honey, salt, pepper, and cilantro.
  • Add chicken thighs to the marinade, ensuring they are fully covered. Cover and refrigerate for at least 1 hour (up to overnight).
  • Preheat your grill to medium-high heat (about 400°F).
  • Remove chicken from marinade (discard marinade) and place skin-side down on the grill. Cook for 6-7 minutes per side until an internal temperature of 165°F is reached.
  • Let the chicken rest for 5 minutes before serving.
