Instructions
In a large bowl, combine coconut milk, lime juice, garlic, honey, salt, pepper, and cilantro.
Add chicken thighs to the marinade, ensuring they are fully covered. Cover and refrigerate for at least 1 hour (up to overnight).
Preheat your grill to medium-high heat (about 400°F).
Remove chicken from marinade (discard marinade) and place skin-side down on the grill. Cook for 6-7 minutes per side until an internal temperature of 165°F is reached.
