Crispy, cheesy, and creamy, these Mashed Potato Cheese Puffs are the perfect way to use up leftovers. Easy to make, customizable, and kid-approved!
Ingredients
mashed potatoes (leftover or freshly made)
eggs
shredded cheese (cheddar, Gruyère, mozzarella, or a blend)
grated Parmesan cheese
milk
Salt and pepper, to taste
Butter or cooking spray (for greasing muffin tin)

Instructions
Preheat oven to
400°F (200°C)
. Generously grease a standard or mini muffin tin.
In a large mixing bowl, combine mashed potatoes, eggs, shredded cheese, Parmesan, milk, chives (if using), salt, and pepper.
Gently fold ingredients together—do not overmix.
Spoon the mixture evenly into the muffin tin, filling each cup about 3/4 full.
Sprinkle extra Parmesan or shredded cheese on top of each puff.
Bake for
20–25 minutes
(or
15–18 minutes
for mini muffins), until golden and crispy.
Let cool in the pan for
5 minutes
, then carefully remove and serve warm.
