Crispy, cheesy, and creamy, these Mashed Potato Cheese Puffs are the perfect way to use up leftovers. Easy to make, customizable, and kid-approved!

Ingredients
  

  • mashed potatoes (leftover or freshly made)
  • eggs
  • shredded cheese (cheddar, Gruyère, mozzarella, or a blend)
  • grated Parmesan cheese
  • milk
  • Salt and pepper, to taste
  • Butter or cooking spray (for greasing muffin tin)

Instructions
 

  • Preheat oven to 400°F (200°C). Generously grease a standard or mini muffin tin.
  • In a large mixing bowl, combine mashed potatoes, eggs, shredded cheese, Parmesan, milk, chives (if using), salt, and pepper.
  • Gently fold ingredients together—do not overmix.
  • Spoon the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  • Sprinkle extra Parmesan or shredded cheese on top of each puff.
  • Bake for 20–25 minutes (or 15–18 minutes for mini muffins), until golden and crispy.
  • Let cool in the pan for 5 minutes, then carefully remove and serve warm.
