Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 16 oz cream cheese softened
  • ¾ cup granulated sugar
  • 1 cup sour cream
  • ½ cup pure maple syrup
  • 3 large eggs room temperature
  • 1 tsp vanilla extract
  • ½ cup chopped pecans or walnuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter. Press into the bottom of a springform pan.
  • Bake the crust for about 10 minutes until golden. Let cool.
  • In a large bowl, beat cream cheese and sugar until smooth (about 3-4 minutes).
  • Add sour cream and eggs one at a time; mix well after each addition.
  • Stir in maple syrup and vanilla extract until fully combined.
  • Pour filling over cooled crust and bake for 50-60 minutes, or until slightly jiggly in the center.
  • Cool at room temperature for an hour, then refrigerate for at least four hours before serving.
