  • 1 cup fresh or frozen corn kernels
  • 2 fresh jalapeños finely chopped (seeds removed for milder flavor)
  • 4 oz cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying enough to cover the bottom of the skillet

Instructions
 

  • Gather and prepare all ingredients by chopping jalapeños and measuring corn and cheeses.
  • In a large bowl, whisk together flour, baking powder, salt, and pepper until well combined.
  • In another bowl, mix cream cheese with eggs until smooth. Gently fold in corn and jalapeños.
  • Gradually add dry mixture to wet mixture using a spatula without overmixing.
  • Heat oil in a skillet over medium heat until it reaches 350°F (175°C).
  • Scoop batter into the hot oil and fry for about 3-4 minutes on each side until golden brown.
  • Remove from oil and drain on paper towels before serving.
