Ingredients
  

  • russet potatoes, cut into hearty wedges.

  • salt, to enhance the flavors.
  • garlic powder, for a kick of garlic.
  • Italian seasoning, bringing those beloved Italian vibes.
  • shredded Parmesan cheese, because cheese makes everything better.
  • Fresh parsley (or cilantro) for a pop of color.
  • Ranch or blue cheese dressing for dipping.

Instructions
 

  • Preheat and Prep:Preheat your oven to 375°F (190°C). Lightly grease a large baking sheet to prevent sticking.
  •  Slice and Coat:Slice the russet potatoes into wedges and place them in a large mixing bowl. Drizzle with olive oil and toss until all wedges are evenly coated.
  •  Mix the Seasoning:In a small bowl, combine the salt, garlic powder, and Italian seasoning. Mix well.
  • Add Parmesan and Seasoning:Sprinkle the shredded Parmesan cheese over the potato wedges and toss again. Next, sprinkle the seasoning mixture over the top and give it one final toss for an even coating.
  • Arrange for Baking:Lay the wedges on the prepared baking sheet in a single layer with the skin sides down. This ensures even cooking and a crispy texture.
  • Bake to Perfection:Bake in the preheated oven for 25–35 minutes, or until the wedges are fork-tender and golden brown.
  • Garnish and Serve:Remove from the oven and sprinkle with freshly chopped parsley. Serve hot with your choice of ranch or blue cheese dressing for dipping.
