  • 1/4 cup extra virgin olive oil
  • 2 garlic cloves minced
  • 1 tablespoon dried oregano
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Tzatziki sauce store-bought or homemade
  • Fresh vegetables tomatoes, cucumbers, red onions

Instructions
 

  • In a bowl, mix olive oil, garlic, oregano, lemon juice, salt, and pepper to create the marinade.
  • Add the chicken to the marinade; cover and refrigerate for at least 30 minutes.
  • Preheat grill or skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side until fully cooked (165°F internal temperature).
  • Let the chicken rest for 5 minutes before slicing into strips.
  • Assemble bowls with rice or greens as the base; top with sliced chicken and fresh vegetables.
