Ingredients
  

  • coleslaw mix 
  • rotisserie chicken, finely chopped
  •  toasted sliced almonds
  • dried cranberries
  • red onion, finely diced
  • sesame sticks (optional)
  • chopped cilantro
  • cans mandarin oranges, drained
  •  black sesame seeds (or regular sesame seeds)
  • extra-virgin olive oil
  • balsamic vinegar
  • low-sodium soy sauce
  • cloves garlic, chopped
  • honey (or brown sugar)
  • minced ginger
  •  toasted sesame oil

Instructions
 

  • In a large bowl, layer the coleslaw mix, chicken, almonds, cranberries, red onion, sesame seeds, sesame sticks (if using), and cilantro.
  • Add mandarin oranges if desired.
  • Combine the olive oil, balsamic vinegar, soy sauce, garlic, honey, ginger, and sesame oil in a blender.
  • Add 3 tablespoons of water and blend until smooth.
  • Lightly pour the dressing over the salad mixture to the desired moistness.
  • Gently toss and serve.
